Biscuit Roti
Preparation time : 20min Cooking time : 20 min Serves: 4
Ingredients:
For the outer covering
- Whole wheat flour - 1 ½ cups
- Fine suji or semolina - 3 tablespoons
- Ghee - 1 tablespoon
- Oil - 1 tablespoon
- Salt - to taste
For the filling
- Suji or semolina - ¼ cup to ½ cup
- Sambar stories Chutney powder - ½ to ¾ cup
- Coriander leaves - 1 big bunch of
- Green chillies - 5
- Curry leaves - 2 sprigs
- Hing or asafoetida powder - ½ teaspoon
- Salt - to taste
- Oil - for deep fry
Method:

Step 1:
- Add the flour and salt to a mixing bowl. Add in the hot oil and little water and knead the dough well.

Step 2:
- Heat oil in a pan and add mustard seeds and curry leaves. Add all the ingredients for filling after the mustard seeds splutter and mix well. Transfer this to a dish.

Step 3:
- Take out a lemon sized dough & roll it flat like a chapathi. Take one tablespoon of filling and place it at the center of the flat rolled dough.

Step 4:
- Seal the dough from all sides over the filling such that there is no opening. Roll the above dough flat with thickness of ½ cm.

Step 5:
- Heat oil in a pan. Fry the above rolled dough in the oil on medium flame. Repeat the same procedure for the rest of the dough.

Step 6:
- Drain excess oil on a napkin or tissue paper.

Step 7:
- This delicious dish is ready to eat and can be served with any of the chutney dips by sambar stories.
