Gutti Vankaya Curry using Sambar Stories Bhath Power
Preparation time : 5-10min Cooking time : 30- 35 min Serves: 4
Ingredients:
- Baby brinjals – 500 grams
- Oil – 4 tablespoons
- Coriander leaves – 3 sprigs
For Gravy:
- Tamarind – small piece
- Grated coconut – 2 tablespoons
- Dhaniya powder (coriander seeds) – ½ tablespoon
- Peanuts – ½ cup
- Sesame seeds – 1 ½ table spoons
- Cumin seeds – ½ tablespoon
- Ginger (chopped) – 1 teaspoon
- Garlic (chopped) – 5-6 pods
- Onions (chopped) – 2
- Water – ¼ cup
- Red chilly powder – 1 teaspoon
- Sambar Stories Bhath Powder – 1/2 teaspoon
- Salt – Add to taste
Method:

Step 1:
- Heat water (not boil) and transfer it to a small bowl. Soak tamarind in it to make tamarind juice

Step 2:
- Dry roast peanuts in a pan and transfer them into a bowl

Step 3:
- Add 1 tablespoon of oil to the pan. Add onions to it and sauté till they turn translucent

Step 4:
- Now add the roasted peanuts, sautéed onions, tamarind juice and the rest of the gravy ingredients into a grinder jar to make a fine paste

Step 5:
- Clean the brinjals and make a cross cut at their bottom with the stalks intact

Step 6:
- Stuff the brinjals with the finely grounded paste

Step 7:
- Heat 3 tablespoons of oil in a pan. Add the stuffed brinjals to it and sauté on a low flame

Step 8:
- Add the left over finely grounded paste to the sautéed ingredients in the pan

Step 9:
- Stir occasionally and cook till oil settles on the top and add coriander leaves
- Step 10:
- This delicious dish is ready to eat and can be served with rice or roti
