India’s most zesty dish: Vathal Kuzhambu

Vathal kuzhambu – one of the words which will trigger our taste buds and makes us mouth-watering. Kuzhambu (known as “broth” in English) is a thick soup that has been cooked with a combination of vegetables (or meat or dal) and served in gravy texture. Likewise, vathal kuzhambu’s primary ingredients are turkey berry and shallots. 

Vathal Kuzhamu is a tamarind-based gravy originated from Tamil Nadu, India. Vathal Kuzhambu is an enticing and spicy dish usually prepared at least once a week to balance the heavy diet we took on that week. This dish is customarily made on monsoon days to warm up the body from cold and also due to the absence of some varieties of vegetables in that season.

The dish is in Tamil cuisine for a very long time, basically created for its medical values. Turkey berry keeps many intestinal problems such as diarrhea at the shoreline. Shallots have antibacterial, antifungal, and antiviral properties.

Ingredients:

FOR FRYING SUNDAKKAI

  • Three tablespoons gingerly oil
  • 1/4 cup sundried turkey berry 

INGREDIENTS

  • Tamarind
  • Sambar Stories Vatha Kolambu Powder
  • Three tablespoons gingerly oil
  • ¼ teaspoon mustard seeds
  • ¼ teaspoon fenugreek seeds
  • ½ teaspoon fennel seeds
  • 2 sprigs curry leaves
  • 10 shallots,
  • 10 cloves garlic, 
  • Two tomatoes,
  • ½ teaspoon turmeric powder
  • Two teaspoons red chili powder 
  • 2 teaspoon coriander powder
  • 1 teaspoon jaggery
  • salt 
  • a pinch of asafoetida

Recipe:

  • Soak the tamarind in the water and set it aside for 15 minutes. Then, extract the thick pulp.
  • Heat the pan with three teaspoons of oil and add mustard seeds, fenugreek seeds, fennel seeds, and curry leaves. Leave until the mustard pops out. Now, add the shallots and garlic and mix well for 3 minutes.
  • Now, add chopped tomatoes and saute for 1 minute. Add turmeric powder, red chili powder, coriander powder, and jaggery and mix for a minute
  • Add salt, a pinch of asafoetida, and 2-3 teaspoons of Sambar Stories Vatha Kolambu Powder. Then, add a cup of water and let it boil.
  • Then add the sundried turkey berries with a teaspoon of oil and leave it on low flame for 20-30 minutes.
  • Finally, add the curry leaves.

Now, you should have come to a basic idea about Vathal kuzhambu. Items such as appalam (papad) and vathal (vadam) are suitable side dishes for the recipe. Do try it…
